Course Introduction

The Royal Society for Public Health (RSPH) Level 2 Award in Food Safety in Catering is a qualification that covers the basic principles of food hygiene for caterers and other food handlers. It is valuable as a free-standing qualification or as an addition for people following other training programmes.

The qualification is firmly based on the Level 2 National Occupational Standards developed by People 1st, the Sector Skills Council for the hospitality industry, and conforms to the qualification template developed by RSPH and other awarding bodies under the guidance of People1st.

Holders of qualifications based on this specification will have a knowledge and understanding of; the importance of food hygiene, associated food hazards, good hygiene practice and controls based upon an awareness of food safety management systems. These topics are regarded by the Food Standards Agency as being important to understanding and maintaining good practice in the handling, processing and preparation of safe food.

Who should attend?

This course should be considered by employers to provide training to a safe level for those who perform low risk tasks and other similar duties regarding food handling and preparation.

It is as specified by the Royal Society of Health suitable for staff in a variety of work settings including restaurants, hotels, catering, hospitals, nursing and residential homes, child care settings or those working in the community.

Course Aims & Objectives

  • The course aims to develop knowledge and understanding of:-
  • Food Poisoning, symptoms and causes
  • Growth of bacteria, Temperature danger zone
  • Hygiene control, personal hygiene
  • Pest control, Kitchen Layout/design, Temperature Control
  • Cleaning and Disinfection, Food Hygiene, The Law

Course Outcomes

Participants will be able to:-

  • Understand a wide range of food safety issues including checking deliveries, storage of food and food products,
  • Contribute to the prevention of spread of infection in particular with relation to food preparation, storage of food and assisting with feeding of babies and young children
  • Comply with standard infection control measures (cleaning and disinfection) and report shortcomings in control measures or areas of concern
  • Report to employer and family any concerns as they arise.
  • Contribute to awareness programmes to other staff and parents where appropriate
